Dining & Culinary

Food, drink, and craft, in photography and film.

What the house cooks and pours, who prepares it, how it is served, and the atmosphere in which it is eaten or drunk. The room appears here as the setting of the meal.

(01)The task

Make the culinary identity clear.

A restaurant or a bar communicates through the offer, the craft, the people who cook and pour, and the hour at the table. The task is to make that identity readable for the website, for press, and for a campaign about the offer. Ingredients, preparation, kitchen and bar teams, service, the cover, and atmosphere are the material. Volume, materials, and spatial detail of the dining room are an architecture question. Here the room matters because of the meal.

Subjects

Subject areas

From the ingredient to the hour of service. The dining room is included as atmosphere and setting, not as a study of the building.

  1. Food and drink

The dishes and drinks that carry this house's culinary identity, shown clearly enough to name.

    Offer

  2. Restaurant and bar concepts

How the restaurant and the bar are conceived: the offer, the occasion, and the idea that holds each room.

    Concepts

  3. Ingredients and preparation

Raw materials and the work done to them, from the condition of an ingredient to a finished plate or glass.

    Craft

  4. Kitchen and bar teams

Cooks and the people who tend the bar, at work. The subject is the craft in their hands.

    Teams

  5. Service

How food and drink reach the guest: the sequence of service in the dining room and at the bar.

    Service

  6. The table

The cover, the glass, and the way a table is laid and then occupied for a meal.

    Table

  7. Atmosphere

Light, sound, occupancy, and the hour: the climate of the room while food and drink are served.

(02)Photography

What a still can separate on the table.

Motion blends steps that a still can hold apart: the condition of an ingredient, one action of preparation, the surface of a dish, a glass, the way a cover is laid. Photography can also take the room at the hour of service, when atmosphere is light and occupancy around the meal. These pictures describe the offer, on the website, in press, or in a campaign for a season or a new dish.

(03)Film

Craft, followed into service.

Film can stay with a preparation long enough to show what the craft is, then move with service to the table. It can also register atmosphere as change: a room filling, a bar in the middle of service, the passage from kitchen to guest. Preparation, the people at work, and the hour of the meal stay in one line.

Approach

How dining work proceeds

The sequence runs from what the kitchen stands for to the hour the meal is served.

  1. Name the carriers

Agree which dishes, drinks, people, and rooms carry the culinary identity that has to be communicated.

    The identity

  2. Separate craft and hour

Photography holds the ingredient, the plate, and the cover. Film follows preparation into service and the room as it fills.

    The split

  3. Edit toward the meal

Bring stills and motion into one account of the meal as it is prepared and served.

Start from the meal that matters.

Write with the food, the drink, and the part of service that needs to be shown. The building as a spatial subject belongs with Architecture & Interiors.
